Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese in a mixing bowl until smooth.
- Add the eggs, almond flour, baking powder, sweetener, and a pinch of salt, mixing until well combined.
- Fold in the blueberries with a spatula gently.
- Spoon the batter onto the baking sheet, shaping into rounds.
- Bake for 20-25 minutes until golden and firm to the touch.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Ensure eggs are at room temperature for a fluffier texture. You can prepare the batter the night before. Avoid over-blending the cottage cheese.
