Description

A light and fluffy cloud bread made with cottage cheese and blueberries, perfect for a healthy snack or breakfast.


Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 cup blueberries
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine cottage cheese and eggs, and blend until smooth.
  3. Add almond flour, baking powder, and salt to the mixture, and stir until well combined.
  4. Gently fold in the blueberries.
  5. Drop spoonfuls of the batter onto the prepared baking sheet.
  6. Bake for 25-30 minutes or until golden brown.
  7. Let cool before serving.

Notes

  • For a sweeter bread, add honey to the mixture.
  • Store leftovers in an airtight container in the refrigerator.
  • Can be served with yogurt or additional fruit.
