Description

Citrus Grilled Shrimp Zoodles is a refreshing and healthy meal that combines grilled shrimp with spiralized zucchini noodles, flavored with a zesty citrus marinade.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 1 orange, juiced
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a bowl, combine orange juice, lemon juice, olive oil, minced garlic, salt, and pepper to create the marinade.
  2. Add the shrimp to the marinade and let it sit for 15-20 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the shrimp for 2-3 minutes on each side until they are pink and cooked through.
  5. While the shrimp is grilling, sauté the spiralized zucchini in a pan over medium heat for 2-3 minutes until slightly tender.
  6. Serve the grilled shrimp over the zoodles and garnish with fresh parsley.
