- 4 chicken thighs (skin-on, bone-in)
- 1/4 cup chipotle honey sauce
- 2 cups potatoes, peeled and cubed
- 1/2 cup smoked Gouda cheese, grated
- 1/4 cup milk
- 2 tablespoons butter (unsalted)
- Salt and pepper to taste
- Olive oil for searing
Instructions
- Preheat oven to 375°F (190°C).
- Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
- Heat olive oil in a skillet over medium heat and sear the chicken thighs for 4-5 minutes per side until golden brown.
- Transfer the chicken to the oven and bake for 20-25 minutes, until the internal temperature reaches 165°F (74°C).
- Boil the potatoes in salted water for about 15 minutes until tender.
- Drain the potatoes and return to the pot, stirring in smoked Gouda, milk, butter, salt, and pepper. Mash until creamy.
- Serve the chicken over the smoked Gouda mashed potatoes.
