Description

A delightful fusion of spicy chipotle and sweet honey chicken served with creamy smoked Gouda mashed potatoes, perfect for any occasion.


Ingredients

  • 4 chicken thighs (skin-on, bone-in)
  • 1/4 cup chipotle honey sauce
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup smoked Gouda cheese, grated
  • 1/4 cup milk
  • 2 tablespoons butter (unsalted)
  • Salt and pepper to taste
  • Olive oil for searing

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Marinate the chicken thighs in chipotle honey sauce for at least 30 minutes.
  3. Heat olive oil in a skillet over medium heat and sear the chicken thighs for 4-5 minutes per side until golden brown.
  4. Transfer the chicken to the oven and bake for 20-25 minutes, until the internal temperature reaches 165°F (74°C).
  5. Boil the potatoes in salted water for about 15 minutes until tender.
  6. Drain the potatoes and return to the pot, stirring in smoked Gouda, milk, butter, salt, and pepper. Mash until creamy.
  7. Serve the chicken over the smoked Gouda mashed potatoes.
