Description

A refreshing and vibrant Chickpea Salad bursting with flavors from fresh vegetables and a zesty dressing.


Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 cup of diced cucumbers
  • 1/2 cup of cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 2 tablespoons of olive oil
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Combine the ingredients: In a large mixing bowl, add the drained and rinsed chickpeas, diced cucumbers, halved cherry tomatoes, and finely chopped red onion. Gently mix to ensure they start to mingle and share their flavors.
  2. Whisk the dressing: In a smaller bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  3. Toss to coat: Pour the dressing over the salad ingredients and gently toss everything together.
