Description

A comforting casserole that combines classic meatloaf with creamy mashed potatoes and bubbling cheese, topped with crispy bacon.


Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup (divided)
  • 2 cups prepared mashed potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tbsp chopped green onions or chives (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
  2. Combine ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup in a large mixing bowl.
  3. Press the meat mixture evenly into the prepared baking dish. Spread the remaining ketchup on top.
  4. Bake in the preheated oven for 20-25 minutes until cooked through.
  5. Spread the mashed potatoes evenly over the cooked meatloaf layer and sprinkle with cheese and crumbled bacon.
  6. Bake again for an additional 10-15 minutes until the cheese is bubbly and golden.
  7. Garnish with green onions or chives before serving.

Notes

Can prepare meatloaf base and mashed potatoes a day ahead and bake when ready. Leftover mashed potatoes work well in this recipe.
