Description
A comforting casserole that combines classic meatloaf with creamy mashed potatoes and bubbling cheese, topped with crispy bacon.

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 1/4 cup finely chopped onion
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp Worcestershire sauce
- 1/2 cup ketchup (divided)
- 2 cups prepared mashed potatoes
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 tbsp chopped green onions or chives (optional)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish.
- Combine ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, pepper, Worcestershire sauce, and half of the ketchup in a large mixing bowl.
- Press the meat mixture evenly into the prepared baking dish. Spread the remaining ketchup on top.
- Bake in the preheated oven for 20-25 minutes until cooked through.
- Spread the mashed potatoes evenly over the cooked meatloaf layer and sprinkle with cheese and crumbled bacon.
- Bake again for an additional 10-15 minutes until the cheese is bubbly and golden.
- Garnish with green onions or chives before serving.
Notes
Can prepare meatloaf base and mashed potatoes a day ahead and bake when ready. Leftover mashed potatoes work well in this recipe.
