- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 can refried beans
- 1 packet taco seasoning
- 1/2 cup diced onions
- 1/2 cup diced tomatoes (optional)
- Sour cream (for serving)
- Salsa (for serving)
Instructions
- Heat a non-stick skillet over medium heat. Add ground beef and diced onions; cook until beef is browned and onions are translucent (about 7-10 minutes).
- Drain any excess fat from the skillet and add taco seasoning. Stir to coat the meat and let it simmer for a few minutes.
- Warm tortillas in a pan or microwave for 20-30 seconds.
- Spread refried beans in the center of each tortilla, add the beef mixture, and top with shredded cheese.
- Roll up the tortillas tightly and place them seam-side down in an oiled baking dish.
- Bake in a preheated oven at 350°F for 10-12 minutes, until the cheese is bubbling.
- Serve hot with sour cream and salsa.
