Description

A delicious layered casserole featuring seasoned ground beef, vegetables, and a creamy topping, all nestled in a biscuit crust.


Ingredients

  • 1.5 pounds Lean Ground Beef
  • 1 Red Bell Pepper, seeded and chopped
  • 1 Yellow Onion, chopped
  • 1 ounce Taco Seasoning Mix
  • 2 ½ cups Biscuit Mix (like Bisquick)
  • 1 cup Water
  • Cooking Spray (like Pam)
  • ½ cup Sour Cream
  • ½ cup Mayonnaise
  • 4 ounces Diced Green Chiles, drained
  • 1 ½ cups Cheddar Cheese, Fiesta Blend, shredded, divided
  • 1 teaspoon Garlic Powder
  • ½ cup Salsa, mild

Instructions

  1. Preheat the oven to 350℉.
  2. Cook the ground beef in a large skillet over medium-high heat until no longer pink; drain excess fat.
  3. Add the chopped onions and red bell pepper; stir for about 4 minutes until softened.
  4. Sprinkle in taco seasoning and mix well; remove from heat.
  5. Prepare the biscuit dough by mixing biscuit mix and water, then press into a greased 9×13 inch casserole dish.
  6. Bake the biscuit base for 5-8 minutes until set and lightly golden.
  7. Assemble the layers, spreading the cooked beef mixture evenly over the biscuit layer.
  8. Mix sour cream, mayonnaise, diced green chiles, ¾ cup cheddar cheese, and garlic powder; layer over the beef mixture.
  9. Add spoonfuls of salsa, then top with remaining cheddar cheese.
  10. Bake uncovered for 30 minutes or until bubbly and golden.

Notes

Make ahead by preparing the layers and refrigerating for up to 24 hours before baking. Add additional veggies or spices as preferred.
