Instructions
- Combine warm milk, sugar, and yeast in a bowl; let sit for 5 minutes until frothy.
- Whisk together flour and salt in a large bowl.
- Pour the yeast mixture, melted butter, and egg into the dry ingredients; stir until a rough dough forms.
- Knead the dough on a floured surface for 5 minutes until smooth and elastic.
- Fold in grated carrots, cinnamon, and nutmeg.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled.
- Turn out the risen dough onto a floured surface; roll into a rectangle about 1/4 inch thick.
- Spread cream cheese across the surface, then sprinkle with sugar and cinnamon.
- Roll tightly from one edge to form a log and cut into 1-inch pieces.
- Place the rolls in a greased baking dish and let rise for another 30 minutes.
- Preheat the oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
- Mix cream cheese, powdered sugar, and vanilla extract for the frosting.
- Cool the rolls briefly before drizzling the frosting over them.
