- 3 large Sweet Potatoes, peeled and sliced into 1/4 inch rounds
- 1/2 cup Butter
- 1 cup Brown Sugar
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla Extract
- 1/2 cup Water
- Pinch of Salt
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and slice the sweet potatoes into uniform rounds, about 1/4 inch thick.
- In a large pot over medium heat, combine the butter, brown sugar, cinnamon, vanilla, water, and salt.
- Cook gently until the mixture thickens and the sugar completely dissolves.
- Add the sliced sweet potatoes to the pot, stirring gently to coat each round thoroughly in the syrup.
- Transfer the sweet potatoes into a baking dish, pouring any remaining syrup over the top.
- Cover the dish tightly with aluminum foil and bake for 30 minutes.
- After 30 minutes, uncover the dish and bake for an additional 15 minutes.
- Serve warm and enjoy!
