Description

Cajun Chicken Loaded Potato Bake is a delicious and hearty dish that combines tender chicken, flavorful spices, and creamy potatoes, all baked to perfection.


Ingredients

  • 4 medium potatoes, diced
  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons Cajun seasoning
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pot, boil the diced potatoes until tender, about 15 minutes. Drain and set aside.
  3. In a mixing bowl, combine the shredded chicken, Cajun seasoning, sour cream, milk, and half of the cheese. Mix well.
  4. Add the cooked potatoes to the chicken mixture and gently fold until combined. Season with salt and pepper.
  5. Transfer the mixture to a greased baking dish and spread evenly.
  6. Top with the remaining cheese and chopped green onions.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.

  • Feel free to adjust the amount of Cajun seasoning to your taste.
