- 4 medium potatoes, diced
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tablespoons Cajun seasoning
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large pot, boil the diced potatoes until tender, about 15 minutes. Drain and set aside.
- In a mixing bowl, combine the shredded chicken, Cajun seasoning, sour cream, milk, and half of the cheese. Mix well.
- Add the cooked potatoes to the chicken mixture and gently fold until combined. Season with salt and pepper.
- Transfer the mixture to a greased baking dish and spread evenly.
- Top with the remaining cheese and chopped green onions.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
