- 8 slices brioche or challah bread, cut thick
- 6 slices thick-cut bacon
- 4 large eggs
- 1/2 cup whole milk
- 1 tablespoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 2 ounces cream cheese, softened
- 1 cup pure maple syrup
- 2 tablespoons bourbon
- 1 teaspoon vanilla extract
- Pinch fine salt
Instructions
- Preheat oven to 400°F (200°C). Arrange bacon on a wire rack over a baking tray and bake for 15 minutes until crispy. Let rest and chop finely.
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until creamy.
- In a separate small bowl, mix the softened cream cheese with the chopped bacon until fully incorporated.
- Carefully create pockets in each slice of bread using a sharp knife.
- Generously fill each pocket with the bacon-cream cheese mixture and press the bread closed.
- Dip each stuffed slice in the custard mixture, ensuring it’s evenly coated.
- In a non-stick skillet, melt butter over medium heat and cook stuffed slices for 3 to 4 minutes on each side until golden brown.
- In a small saucepan, warm the maple syrup with bourbon, additional vanilla, and a pinch of salt over low heat for 2 minutes.
- Plate the French toast and drizzle with the bourbon maple glaze. Serve immediately.

Make-ahead tips: Prepare the bacon-cream cheese mixture and custard the night before. Reheat slices in a skillet or toaster for best results.
