Description

A delightful fusion of crispy bacon, creamy filling, and rich brioche, drizzled with a warm bourbon maple glaze.


Ingredients

  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch fine salt

Instructions

  1. Preheat oven to 400°F (200°C). Arrange bacon on a wire rack over a baking tray and bake for 15 minutes until crispy. Let rest and chop finely.
  2. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until creamy.
  3. In a separate small bowl, mix the softened cream cheese with the chopped bacon until fully incorporated.
  4. Carefully create pockets in each slice of bread using a sharp knife.
  5. Generously fill each pocket with the bacon-cream cheese mixture and press the bread closed.
  6. Dip each stuffed slice in the custard mixture, ensuring it’s evenly coated.
  7. In a non-stick skillet, melt butter over medium heat and cook stuffed slices for 3 to 4 minutes on each side until golden brown.
  8. In a small saucepan, warm the maple syrup with bourbon, additional vanilla, and a pinch of salt over low heat for 2 minutes.
  9. Plate the French toast and drizzle with the bourbon maple glaze. Serve immediately.

Notes

Make-ahead tips: Prepare the bacon-cream cheese mixture and custard the night before. Reheat slices in a skillet or toaster for best results.
