Description

  • 8 slices brioche or challah bread, cut thick
  • 6 slices thick-cut bacon
  • 4 large eggs
  • 1/2 cup whole milk
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • 2 ounces cream cheese, softened
  • 1 cup pure maple syrup
  • 2 tablespoons bourbon
  • 1 teaspoon vanilla extract
  • Pinch of fine salt

Instructions

  1. Preheat your oven to 400°F. Arrange bacon slices on a wire rack set over a baking tray and bake for 15 minutes until crisp.
  2. In a shallow bowl, whisk eggs, milk, vanilla extract, and cinnamon until blended.
  3. In a separate bowl, blend softened cream cheese with the chopped bacon.
  4. Create a pocket in each slice of bread and fill with the cream cheese and bacon mixture.
  5. Dip each stuffed bread slice into the custard mixture, ensuring an even coating.
  6. In a non-stick skillet, melt butter over medium heat. Cook each stuffed slice for 3–4 minutes per side until golden brown.
  7. In a small saucepan, warm maple syrup, bourbon, vanilla extract, and a pinch of salt for about 2 minutes.
