Description

A delightful loaf featuring the sweet combination of blueberries and peaches, perfect for brunch or as a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup diced peaches
  • 1 cup blueberries
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup granulated sugar
  • 1 stick (1/2 cup) unsalted butter, at room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine dry ingredients in a large mixing bowl.
  3. Cream the butter and sugar in a stand mixer until light and fluffy.
  4. Incorporate eggs and vanilla, mixing well.
  5. Blend in sour cream until smooth.
  6. Combine dry and wet ingredients, mixing just until combined.
  7. Fold in blueberries and diced peaches gently.
  8. Prepare a loaf pan by greasing or lining it with parchment paper.
  9. Bake for 1 hour and 15 minutes or until golden brown.
  10. Cool in the pan for 10 minutes before transferring to a cooling rack.
