- 2 cups cottage cheese
- 1 cup fresh blueberries
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the cottage cheese, eggs, honey, and vanilla extract until well combined.
- Add the rolled oats, baking powder, cinnamon, and salt to the mixture and stir until incorporated.
- Gently fold in the blueberries.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden and set.
- Let it cool for a few minutes before serving.
