A comforting and flavorful French onion pot roast made in the slow cooker, perfect for cozy evenings and family gatherings.

- 1 oz packet beefy onion soup mix
- 4 garlic cloves, minced
- 1/2 tsp dried rosemary
- 1 large onion, thinly sliced
- 1 tsp dried thyme
- 1 tsp black pepper
- 2 cans (10.5 fl oz each) condensed French onion soup
- 2 tbsp vegetable oil
- 1/2 cup unsalted butter
- 1 tsp kosher salt
- 1 chuck roast (2 to 3 lb, room temperature)
- 1/4 cup water
- Chopped parsley for garnish
- 2 tbsp cornstarch (slurry with water)
Instructions
- Prepare the Ingredients: Slice the onions and mince the garlic.
- Sear the Beef: In a sauté pan, heat vegetable oil and sear the seasoned chuck roast for 3-4 minutes on each side.
- Layer the Flavors: Place the seared roast in the slow cooker and add onions, garlic, onion soup mix, rosemary, and thyme.
- Add the Soups and Water: Pour in the French onion soup and water.
- Add the Butter: Dot the top of the roast with slices of unsalted butter.
- Cook Low and Slow: Cover and cook on low for 8-10 hours or high for 4-5 hours.
- Finish with a Glaze: Remove the roast, create a cornstarch slurry, and stir it into the simmering liquid to thicken.
- Serve: Slice the roast, serve with sauce, and garnish with parsley.
Notes
You can prepare ingredients a day in advance to save time. Feel free to add carrots or potatoes for a one-pot meal.
