Ingredients

- 2 cups broccoli florets
- 8 ounces pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/2 cup shredded cheese (cheddar or feta)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper, to taste
Instructions
- Cook the Pasta: In a large pot of well-salted boiling water, add your pasta and cook until al dente. Drain and rinse under cold water.
- Combine Fresh Ingredients: In a large mixing bowl, combine the cooked pasta with broccoli, cherry tomatoes, red onion, bell pepper, and cheese.
- Prepare the Dressing: In a smaller mixing bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Dress the Salad: Pour the dressing over the pasta mixture and gently toss to coat.
- Chill & Serve: Cover and chill in the refrigerator for at least 30 minutes before serving.
