Description

A vibrant and refreshing pasta salad packed with fresh vegetables, tender pasta, and a zesty dressing, perfect for any occasion.


Ingredients

  • 2 cups broccoli florets
  • 8 ounces pasta (rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/2 cup shredded cheese (cheddar or feta)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: In a large pot of well-salted boiling water, add your pasta and cook until al dente. Drain and rinse under cold water.
  2. Combine Fresh Ingredients: In a large mixing bowl, combine the cooked pasta with broccoli, cherry tomatoes, red onion, bell pepper, and cheese.
  3. Prepare the Dressing: In a smaller mixing bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. Dress the Salad: Pour the dressing over the pasta mixture and gently toss to coat.
  5. Chill & Serve: Cover and chill in the refrigerator for at least 30 minutes before serving.
