Description

Delicious and nutritious banana spinach muffins that make for a perfect healthy snack.


Ingredients

  • 2 ripe bananas
  • 1 cup fresh spinach, chopped
  • 1/2 cup whole wheat flour
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup yogurt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the chopped spinach, honey (or maple syrup), yogurt, and egg to the mashed bananas and mix well.
  4. In another bowl, combine the whole wheat flour, oats, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • These muffins can be stored in an airtight container for up to 3 days.
  • For added flavor, consider adding nuts or chocolate chips.
  • Feel free to substitute the honey with agave syrup for a vegan option.
