Delicious and nutritious banana spinach muffins that make for a perfect healthy snack.

- 2 ripe bananas
- 1 cup fresh spinach, chopped
- 1/2 cup whole wheat flour
- 1/2 cup oats
- 1/4 cup honey or maple syrup
- 1/4 cup yogurt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 egg
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the chopped spinach, honey (or maple syrup), yogurt, and egg to the mashed bananas and mix well.
- In another bowl, combine the whole wheat flour, oats, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- These muffins can be stored in an airtight container for up to 3 days.
- For added flavor, consider adding nuts or chocolate chips.
- Feel free to substitute the honey with agave syrup for a vegan option.
