Description

A quick, one-pan wonder featuring tender chicken and colorful vegetables coated in a luscious balsamic glaze for a delicious and satisfying meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups mixed vegetables (bell peppers, zucchini, broccoli, or asparagus)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together balsamic vinegar, olive oil, honey, minced garlic, salt, and pepper.
  3. Place chicken breasts on a sheet pan and arrange mixed vegetables around them.
  4. Drizzle the balsamic glaze over chicken and vegetables, coating them evenly.
  5. Bake in the preheated oven for 25-30 minutes, until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
