Ingredients

Scale
  • 1 lb ground beef
  • 1 cup chopped onions
  • 2 cups mixed vegetables (carrots, corn, peas)

  2. Brown the beef and onions in a large skillet over medium heat until the beef is browned and onions are translucent, about 5-7 minutes.
  3. Combine the mixed vegetables, cooked rice, and cream of mushroom soup; stir until well mixed and season with salt and pepper.
  4. Transfer the mixture to a greased casserole dish, spreading it evenly.
  5. Add the shredded cheese on top, making sure to cover it evenly.
  6. Bake for 25-30 minutes until the cheese is melted and bubbly.
