- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 cup grated carrots
- 1/2 cup mashed bananas (about 1 large banana)
- 1/2 cup applesauce
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, oats, brown sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, combine the grated carrots, mashed bananas, applesauce, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

- For added flavor, consider adding nuts or chocolate chips.
- These muffins can be stored in an airtight container for up to 3 days.
